Our wild elderberries, also known as sambucus nigra, and are of the European variety. They are small, round black-blue berries which have a distinct sweet-tart flavor with a light earthy accent. Sambucus cerulea is a large, deciduousshrub, which can grow to be 9 metres (30 ft) in height and 6 metres(20 ft) in width. There are several types of elderberries native to North America and Europe. The blue-black varieties are used for medicinal purposes (Sambucus Nigra). The varieties with red berries are not.


To strain the elderberries, we set a fine-mesh stainless steel strainer lined with either a nut milk bag or cheesecloth, set on top of a glass mixing bowl. We like this organic cotton unbleached cheesecloth.


Because elderberries naturally contain vitamins A, B, and C, they naturally stimulate and wake up the immune system. This makes it a great remedy for seasonal illnesses such as colds and the flu. Elderberries are powerful medicine to have on hand yet there is much controversy surrounding the elder. To heat or not to heat? Are elderberries poisonous? These are the questions for which I do my best to give thoughtful and well researched answers.


In order to easily separate the elderberries from the rest of the plant material, freeze the harvest overnight. Garble the berries from the stems while they are still frozen. Once the berries thaw out, it becomes difficult, time consuming, and messy to remove the stems.


When processing elderberries, care must be taken to ensure that the medicinal components are kept intact. While immune supporting magnesium, potassium, niacin, viburnic and shikimic acids and other health supporting constituents and nutrients in elderberries can withstand heating and drying, the ascorbic acid, anthocyanins, and many other flavonoids (AKA antioxidants) may not. Heat and drying, whether it is stove top heat, or drying in dehydrators, microwaves (!), or any other heat source can degrade to a degree to destroy many of the flavonoids in plants (1). Process temperature is a critical parameter that impacts on the food matrix, altering heat-sensitive compounds such as anthocyanins, in strong relation to magnitude and duration of heating (2).


The antiviral and anti-inflammatory actions of the anthocyanins in elderberries are reduced with heating. 10 minutes in a hot water bath reduces the anthocyanins by up to 10%. Rather than steeping elderberries in hot water, most people boil (212 degrees F) their elderberries on the stove for much longer than 10 minutes at a much higher heat, which destroy a greater percentage of the healthful actions.


Personally, I use only fresh elderberries in my remedy making. Why heat the elderberries to lose even a small percentage of its medicine? I honor the plant giving itself to me by utilizing as much of the medicine as possible. Additionally, I microdose, so never have to deal with the possible lectin issue. I take only a teaspoon of an elixir, tincture or oxymel per dose and space each dose out a few hours in between.
